6 free-range eggs
150g caster sugar
500ml whole milk
400ml double dream
350ml of rum and/or bourbon
Freshly grated nutmeg, to taste.
Directions:
Whisk the egg yolks and 100g of caster sugar together. Stir in the milk, cream and alcohol. Pour them into bottles and store in the fridge for up to two weeks. Place the egg whites in a box and freeze until you’re ready to serve the eggnog.
Once you’re ready to serve, defrost the egg whites and whisk into soft peaks whilst adding the 50g of caster sugar before folding in the eggnog. Once ready, serve in glass tumblers with a grating of nutmeg for the ultimate Christmas drink.
